With an average rainfall of 120mm, the island of Lanzarote is considered dry and arid.
Despite the lack of rain Lanzarote became - along with Fuerteventura - the burn of the Canary Islands. The cereal fields occupied a large part of the land and Lanzarote could to export them to the other islands, to produce the gofio and to supply its entire population.
